About and standards
A kitchen reference that shows its working.
Soup Letters answers cooking questions plainly: what to buy, how to do it, when it is done, and why. The answer comes first. The reasons, numbers and sources follow.
What we publish
- Guides
- Complete guides to a kitchen decision or skill, from first principles.
- Answers
- One kitchen question, answered in the first line and then explained.
- Recipes
- Recipes cooked and measured in a home kitchen before they are published.
Where the numbers come from
Safe cooking temperatures, storage times and handling advice come from the agencies that set them, chiefly the USDA Food Safety and Inspection Service, the FDA, the CDC and university extension services. We link the exact page we used, give temperatures in both °F and °C, and say when agencies disagree.
For how cookware and ingredients behave, we use material data, manufacturer documentation and published food science, and we say which is which.
How each page was made
Every page carries one of three labels, shown under the title and at the end.
- Editorial
- Our judgment on a question of taste or approach, with the reasoning shown.
- Desk research
- Built from published sources: food safety agencies, extension services, manufacturers, and peer-reviewed food science. The sources are linked in the text.
- Kitchen-tested
- We cooked it, measured it and kept notes. Tested pages say what was tested, with what equipment, and what we found.
We never describe a test we did not run, a taste we did not try or a product we did not handle. Recipes are published only once they have been cooked and measured.
Corrections
When something we published is wrong, we fix it and add a dated note at the top of the page saying what changed. Pages that are revised for other reasons show the date of the last update.
What we do not do
No life stories before the recipe, no pop-ups, no sponsored verdicts. We do not accept payment or free products in exchange for coverage.
